"Utterly delicious," is how our butcher describes our bavette - a butchers cut that you won’t find everywhere else. A bavette is as easy to cook as a flank steak but has the extra marbling and flavor of a steak. This is because the bavette starts underneath the sirloin and runs all the way down below the tenderloin. You can marinade it, but our butcher prefers just salt and pepper to let the flavor shine. Our butcher recommends searing it on all sides in a pan, toss in the oven with some herbs and butter on top at 375 for approximately 10 minutes. Let rest, slice against the grain and enjoy.

One order contains two half-inch thick Bone-In pork chops with a total weight of between 1.3 - 1.6 lbs. 

Described by our butcher as "the porkiest pork you can get," our Red Wattle pork chops are an extremely juicy, flavorful and tender lean meat. Our Red Wattle pork is humanely raised without antibiotics or hormones. The animals have plenty of land to roam and grass to eat. Our pork comes from Smith & Smith farms, a small family run operation near Austin that raises pastured pork humanely. Your support of this farm helps conserve the Texas Red Wattle pork breed.

Quick to cook, versatile and a great source of protein, chicken breasts are the perfect staple to have around - especially when they are humanely and pasture raised! The chicken breasts come from Cornish Cross broilers who are moved daily to fresh grass pasture and never given antibiotics, steroids, hormones, or arsenic.
