Our pork comes from Smith & Smith farms, a small family run operation near Austin that raises pastured pork humanely. Your support of this farm helps conserve the Texas Red Wattle pork breed.

Wagyu is a Japanese beef cattle breed with more intra-muscular fat cells, or marbling, which provided a readily available energy source. Wagyu is a beautiful compromise in that it offers amazing taste with health benefits. Wagyu beef contains extraordinary amounts of the monounsaturated healthy oleic fatty acid. Oleic acid is also the fatty acid found in olive oil that has been shown to lower bad LDL cholesterol. Due to the fact that it’s so rich and tender, traditional Japanese servings are grilled in very thin slices that melt in your mouth. We’ve blended the traditional American burger with the Wagyu beef and it’s been described as the best burger you’ll ever have.
Each steak is 1 in. thick and about 10-12oz. Feeds two people nicely.
This little-known cut is our butcher's favorite steak to take home. Flat Iron is a muscle that is found under the scapula of the shoulder of the steer. It is a tender cut with a good deal of marbling that packs a delicious beef flavor. Perfect steak on its own, but benefits from a side of frites and parsley-shallot butter melting on top.
