Red Wattle Italian Sausage Stuffing

Over the last several weeks, we’ve been so excited to offer new Red Wattle pork sausage varieties from Colby Smith at Smith & Smith Farms in Burlington, Texas. In the holiday spirit, we split open a pack of Colby’s Italian sausage to offer a recipe for simple but elegant stuffing (no, don’t stuff the bird with it). With the smooth, crisp taste of the heritage pork highlighted by Italian seasonings and earthy vegetables, this is an elegant take on the holiday favorite – and might help settle some family scores about the “right” way to cook stuffing.

 

 

Red Wattle Italian Sausage Stuffing

Ingredients:

  • 1 lb loose Italian sausage (1 Rosso & Flynn package of 4, with casings removed)

  • 8 cups cubed white bread

  • 1 1/2 cups yellow onion, chopped

  • 2 cups celery, chopped

  • 4 cloves garlic, finely chopped

  • 3/4 cup unsalted butter (1 1/2 sticks)

  • 1 cup low sodium chicken stock

  • 1 tsp sage

  • 2 tsp fresh rosemary, chopped

  • 2 tbsp fresh parsley, chopped

  • 1 tsp fennel

  • Salt and pepper, to taste

Preparation

If bread is overly moist, set oven to warming temperature and allow cubes to dry out. Remove cubes, place in large mixing bowl, and set oven to 350 degrees.

In pan over medium heat, melt butter and add celery and onion. Cook until onions are soft and translucent, then add chopped garlic and cook, stirring occasionally, for another 2 minutes. Remove pan contents and add to mixing bowl with dried bread cubes. Do not clean pan.

Slice open sausage casings and add loose sausage contents to pan. Discard casings. Cook, continuously breaking up sausage to allow maximum surface area, until sausage is browned and cooked through. Remove sausage from pan along with excess fat, adding to mixing bowl with vegetables and bread.

Add chicken broth and spices to mixing bowl. Mix, without crushing the contents, until thoroughly incorporated. Move to greased baking pan, and place in oven for just over one hour, until top of stuffing has thoroughly browned.

Remove from oven, allow to cool, and watch as family members each find a wacky, individual way to incorporate this favorite into their holiday meals, be it atop a mountain of mashed potatoes, placed into a turkey sandwich, or eaten alone.
