Called the "Butcher's Best Kept Secret," Bavettes are a hard to come by cut with great value and flavor. Thicker and more-marbled than skirt steak, the bavette hails from the bottom part of the sirloin. Best when cooked high and dry and marinaded in carne asada, sliced against the grain in a stir fry, or served as a French bistro steak. Bonus points for steak frites.
