Each Sous Vide pack comes with 2 1lb Reserve NY Strips from our ranchers Dean & Peelers. Conveniently vacuum sealed and seasoned with organic olive oil, fresh garlic, thyme, and rosemary. Sous vide ready!

Cooking Instructions:

Preheat your Sous Vide device to the desired temperature (see chart below). Our butcher recommends cooking to medium-rare: 132°F for at least one hour. Once water is up to temperature, place sealed bag making sure the bag is fully submerged.

Once the steaks have cooked long enough according to the chart, pull the bag from the water. Preheat a cast iron pan on high heat. Cut open the bag removing the NY Strips and pat them dry. Once pan begins to smoke, season steaks with salt and pepper on both sides. Add a pat of butter to the hot pan and add both steaks. Sear each steak approximately 30 - 45 seconds a side until until a nice crust has formed. Remove steaks from the pan and serve immediately.

Very Rare to Rare, 120°F to 128°F , 1 to 2 1/2 hours
Medium-rare, 129°F to 134°F , 1 to 4 hours 130°F
Medium, 135°F to 144°F , 1 to 4 hours
Medium-well, 145°F  to 155°F, 1 to 3 1/2 hours
Well done, 156°F and up, 1 to 3 hours
