Our butcher loves this thin marbled cut from the short loin of the steer. The flank is perfect for grilling or a quick sear in a cast iron pan. Flanks take well to marinades, like our butcher's favorite carne asada. But because of it’s fat content and grassfed flavor, even just a little salt pepper and lime goes a long way.
