"Utterly delicious," is how our butcher describes our bavette - a butchers cut that you won’t find everywhere else. A bavette is as easy to cook as a flank steak but has the extra marbling and flavor of a steak. This is because the bavette starts underneath the sirloin and runs all the way down below the tenderloin. You can marinade it, but our butcher prefers just salt and pepper to let the flavor shine. Our butcher recommends searing it on all sides in a pan, toss in the oven with some herbs and butter on top at 375 for approximately 10 minutes. Let rest, slice against the grain and enjoy.
