This is our butcher's favorite hard to source "butcher's cut". The coulotte has a beautiful fat cap with intramuscular marbling that makes it a great cut for smoking, grilling or cooking in a cast iron pan. The culotte comes from the top sirloin and is the muscle attached underneath the sirloin. The coulotte commonly used for the picanha as well. When cooking, our butcher recommends searing the fat side first so when you sear the remainder of it you’ll be searing it in it’s own rendered fat. Sirloin comes from the rump of the animal.
